			<content:encoded><![CDATA[<p>My younger sister, Heather, visited me in Provence this spring during wild flower season. I was driving her around taking her to visit some new wineries that we&#8217;ve been taking clients to and we kept pulling over to take pictures of the poppies. At times it looked like the hills were on fire! In certain scenic spots all over the Provencal countryside we could see many other people doing the exact same thing- pulling over to take pictures in the poppy fields. I thought I&#8217;d share some of the pictures with you to hopefully entice you to come and visit next wild flower season. It&#8217;s a sight not to be missed!</p>

			<content:encoded><![CDATA[<p>Recently retired, Bob and his wife Arlene from New Jersey decided to celebrate with a trip to Europe. They joined us for a <a title="Provence Wine Tour" href="http://www.wineinprovence.com/provence-wine-tour/">wine tour</a> in the Palette AOC which is a tiny wine region just outside of Aix en Provence famous for making wonderful rosé wines. Palette is the smallest wine region in Provence with a total of 42 hectares (the equivalent of 100 acres), and the third smallest wine region in all of France (Bellet is the tiniest wine region in France located in the hills above Nice).</p>
<p>There are only 3 wineries in Palette! We took them to <a href="http://www.chateau-henri-bonnaud.fr/gb/index_gb.html" target="_blank">Henri Bonnaud</a> which has 25 acres in total, 14 of which are AOC Palette. Since the rest of Henri Bonnaud&#8217;s acreage lies outside of the boundary lines of Palette they have to put &#8220;Côtes de Provence&#8221; or &#8220;Vins de Pays&#8221; on the labels for their other wines. The regulations in France are very strict, dictating rules for irrigation, pruning, harvest dates, and blending percentages, just to name a few. While quality control in France can be tedious, we continue to enjoy French wines which are guaranteed to be good precisely because of the many rules!</p>
<p>Henri Bonnaud is a third generation winery. The first Henri Bonnaud vintage was in 2004, but long before that Stéphan and his grandfather were growing grapes and selling them to the local co-ops.</p>
<p>We recommend a visit to this winery not only for its wines (white, rosé, and red), but for the stunning views of vineyards along the base of famous Mount Sainte Victoire from their terrace.</p>

So how did WineInProvence end up with this connection over 10,000 miles away? Opera Australia puts on a first-class French themed wine and gourmet event called &#8220;Dinner on the Dock&#8221;. It is one of Australia&#8217;s most prestigious Gourmet Food and Wine events of the year, held in the ‘paint dock’ of the company’s headquarters in Sydney, Australia.</p>
<p>On Saturday, May 26th 2012, <a href="http://www.opera-australia.org.au/">Opera Australia</a> will host 200 high-net worth distinguished guests (including many corporate contacts, Members of Parliament, opera patrons, selected media, etc.) to this black tie event. The Sydney Opera House was declared a World Heritage Building in June 2007 by UNESCO, the United Nations Education, Scientific and Cultural Organisation, but has long been a cultural landmark, not only for Sydney, but Australia as a whole. 			<content:encoded><![CDATA[<p>WineInProvence recently hosted Susan and her husband on a customized <a title="Wine in Provence Wine Tour" href="http://www.wineinprovence.com/provence-wine-tour/">full-day wine tour</a>. They are working in the television and film industries in Los Angeles, CA but have a heart for France. Together, we visited two fabulous wineries and explored the villages of St. Rémy &amp; Les Baux de Provence, two of the most beautiful villages in all of France. In between our village visits and wine tastings, we stopped for lunch at one of our favorite places: <a href="http://restaurant-lestagnol.com/anglais.htm" target="_blank">L&#8217;Estagnol</a>. This seafood restaurant is located right in the city center with fabulous terrace seating and attentive service. If you ever find yourself looking for a place to eat in St. Rémy, we highly recommend this choice. To whet your appetite for Provençal-style seafood, below are some photos of the oysters, mussels, and cod we enjoyed.<br />

			<content:encoded><![CDATA[<p>This past week, WineInProvence held another uber-popular Student Wine Tasting event. We had 38 thirsty students attend! Given the size of our group, we went to Pasta Cosy Italian Restaurant in the centre ville of Aix-en-Provence, where the wonderful owner, Fabien, welcomed us into his &#8220;cave&#8221; beneath the restaurant for our exclusive tasting! Along with a line up of some fantastic bottle of French wine, the students relished in sampling assorted tapas, two tastings of Pasta Cosy&#8217;s popular main courses, and ending with a trial of three desserts!</p>

			<content:encoded><![CDATA[<div>In the beautiful, sun-soaked city of Aix en Provence, you&#8217;ll find it hard not to stumble upon the main boulevard, the Cours Mirabeau. This tree-lined main street is the hub for the historic cafes and 16th century townhouses, and at the end of the road you will find the enormous, mesmerizing Rotonde fountain. Often featured on post cards and posters, this massive fountain is one of the most popular and enduring images of Aix. There&#8217;s a reason Aix is called &#8220;the city of fountains.&#8221; There are 33 fountains in the historic city center alone. The Romans first came here in 123 BC because of the desirable natural hot springs flowing below the city (apparently the minerals in the luke warm water are very good for your skin!). The Romans created many baths and they coined their new city <em>Aquae Sextiae. </em>This name later morphed from Latin to the French &#8220;Aix&#8221; that we known it as today.</div>

			<content:encoded><![CDATA[<p>This fall the WineInProvence team took a research trip to the Chateauneuf-du-Pape, Gigondas, and Vacqueyras regions of France. We set off to have a marathon wine tasting day and experience some of the places that we had not yet been to in these areas. Our mission; to expand our winery contact list and find some new places to take our clients. Our first stop was &#8220;Ogier&#8221; in Chateauneuf-du-Pape where we had a fun tour and tasting with our host, Guy. While sipping on Ogier&#8217;s Estate wine, we learned that Robert Parker was doing the same thing right across the street from us! If you don&#8217;t know who this man is, Robert Parker is kind of like the Oprah of the wine industry, even deemed as having the same &#8220;effect&#8221; as followers of his wine reviews will trust his word without question.</p>
<p>Instead of Robert Parker traveling from tasting room to tasting room in each region (like we were doing on this day), naturally, the wines are brought to him at &#8220;La Maison du Vin&#8221;. This is an event/conference room named &#8220;The House of Wine&#8221;- they have one in each village. And, of course, each winery presents him with their best bottles. Of the three wine regions we visited that day, each person who received us mentioned in hushed tones that Robert Parker had just been in their area doing blind tastings. They had just dropped off their highest end wines to the local event room for him to try. <strong>We had no idea when we got into the car that morning that we&#8217;d literally be chasing Robert Parker all over the Southern Rhone!</strong></p>

<p>Mr. Parker travels all over and gets served a portion of some of the world&#8217;s most amazing wines. Just imagine a man in a room full of bottles&#8230;he alone will decide for the rest of us which are the best, all depending on which bottles his palette approves of the most. You can understand why some people disregard his notes-after all, he is just a human with a little more refined palette and a very well known name. But the people of Châteauneauf-du-Pape, Gigondas, and Vacqueyras all seem to respect and admire him, and they have reason to as he is HUGELY responsible for bringing about the hype to these tiny villages in Southern France. For example, we sometimes visit places that can barely be called &#8220;tasting rooms&#8221;- they&#8217;re more like garages; no tree lined driveways, no candlelit caves. Just a garage attached to the winemaker&#8217;s house with cars parked next to the barrels. These hard to find tasting rooms belong to families that have been producing wines for generations and Hilary and Brian would never have found these places without the high ratings from Robert Parker. In fact, he gave one bottle of red wine from &#8220;Domaine du Pegau&#8221; a high rating a couple years back and now it&#8217;s selling for 150 euros a bottle!</p>

			<content:encoded><![CDATA[<p>A couple of weeks ago the WineInProvence girls (Brian was out of town) got a chance to attend a wine festival right here in Aix! For three euros and an appetite for wine, we received a logo glass and tastes of newly released wine from the Aix-en-Provence region. The event was set up in tents that lined the beautiful Cours Mirabeau in the city center. Typical French; there was NO marketing for this event. Ironically, we found out about it through some clients we had hosted on a wine tour the day before the event. To think we almost missed such a fun day! My mom and her husband happened to have arrived in Aix from California the night before so they had a great opportunity to experience Aix wines with me and Katherine and Hilary (who was taking these pictures). It was a great way to spend a Sunday in Provence!</p>

Here is our recipe for these succulent shellfish. Choose a mineral, crisp wine, such as a bottle of Sancerre, a Pouilly-Fumé, or a Cassis white for pairing. Avoid an oaked Chardonnay. We recommend serving the same wine that was used to cook the mussels.</p>
<p>Don&#8217;t forget to enjoy this dish with a crunchy baguette- it&#8217;s perfect for sloping up the yummy garlic butter sauce!</p>

<li>Chop the onion</li>
<li>Mince the garlic (or use a garlic press)</li>
<li>Dice the tomatoes into small portions</li>
<li>Remove the beards from the mussels &amp; if there are any open mussels, close them by knocking firmly on the shell with another mussel</li>
<li>Put the frying pan on high heat &amp; add olive oil to the pan</li>
<li>Sweat the onions (you don&#8217;t want them brown or burned)</li>
<li>Add tomatoes and garlic, cook for only 1 minute</li>
<li>Add white wine &amp; reduce for a few minutes</li>
<li>Mix in cream</li>
<li>Add the mussels and IMMEDIATELY cover the pan with a tight fitting lid</li>
<li>Only when steam starts seeping out of the edges, then you can briefly check to see if the mussels are open. If they are, then they&#8217;re done! Don&#8217;t over cook</li>
