Upside-Down Caramelized Apricot Tart

My husband, Dominic, recently got a new camera and I borrowed it during our Market Day Cooking Class (as you’ll see, I went a little crazy =). The following photos are the making of an an Upside-Down Caramelized Apricot Tart from beginning to end. Our clients were an American couple living and working in The Netherlands. Not only was this tart exceptional to look at (and photograph) but it tasted great, as well. The smell of the tart in the oven was so overpowering while it was baking that we almost burnt our tongues eating it since we couldn’t wait long enough for it to cool down!
